He judged a competition that I had at the cafe that I was running. He know a lot about coffee and is pretty popular in the Vancouver coffee scene. This technique seems to be similar to what you would do when you actually cup coffee. I like the part about removing the grinds because then if you want to have the coffee sit in the pot a little longer you can with out worrying about about over saturation and such.
